Legumes are rich in nitrogenous compounds, carbohydrates, B vitamins and many of them contain lipids. They are therefore a food of high nutritional value. The intake of pulses contributes to the treatment of obesity and the prevention and treatment of chronic diseases such as diabetes, coronary heart disease and cancer. They are also an important source of plant protein for animals. The main legumes are lentils, beans, beans, peas, peas, peas, chickpeas, soybeans, soybeans, pigeon peas, lupins and peanuts. Legumes are one of the oldest human foods.
