The UN Food and Agriculture Organization (FAO) has declared 10 February as World Pulses Day to raise public awareness of the nutritional benefits of pulses. Legumes are rich in nitrogenous compounds, carbohydrates, B vitamins and many of them contain lipids. They are therefore a food of high nutritional value. The intake of pulses contributes to the treatment of obesity and the prevention and treatment of chronic diseases such as diabetes, coronary heart disease and cancer.
